Smoked Salmon Fishcakes
Smoked Salmon Fishcakes in Oatmeal
Ingredients:

250g Smoked salmon trimmings
250g mashed potato
1 beaten egg
1 teaspoonful of lemon juice
Seasoning
For coating:
1 beaten egg
Medium or coarse oatmeal
Method:
Combine all the ingredients. It's nice to have some smoke-roasted salmon or smoked haddock flaked into the trimmings for some extra texture.
Seasoning - there are many exciting versions of fish cakes you can make simply but changing your seasoning. Try using pepper, crushed garlic, spring onions, chili or lemongrass and coriander for starters! Salt should be used sparingly as trimmings are naturally salty.
Shape the mixture into a long roll. If it is too stiff add a little milk. Dip in beaten agg and roll in the oatmeal. Cut into individual portions and shape into fish cakes.
Fry in hot oil until crisp on one side, turn and lower the heat when second side is crisp. Continue cooking on the lower heat until the fishcakes are hot through.
