Kiln and Cask combine in a marriage of Scotland’s finest
The development of whisky cured smoked salmon came naturally to us at Summer Isles Foods; combining two of Scotland’s most famous products into one delicious one!
This really is one where, providing you like whisky, the whole is truly greater than the sum of the parts.
The process of production for our whisky smoked salmon is slightly different to our other smoked salmon products. The curing is the same, but we smoke these particular fillets over fresh whisky cask chips prior to maturing them. The cask chips impart a subtle whisky flavour throughout the salmon fillet and get the ball rolling.
Once this process is completed we then hand slice every fillet and give each individual pack a gentle mist of fine Glen Moray whisky, or as we call it the “Alness kiss”!
The Glen Moray mist rounds off the flavour profile, tying together contributions from the salmon, cure, and the various elements of the whisky cask smoke, as well as imparting its own distinctive depth of flavour.
Our whisky smoked salmon is available in a variety of pack sizes including whole sliced, or unsliced, sides.
