Smoked sea loch trout is different to smoked salmon in a number of ways. Primarily it is the way the flesh of the fish takes on the cure and smoke that makes the difference.
The smoking and curing preparation we use comes through much more subtly when dealing with the sea loch trout and leaves more of the natural seafood notes in the flavour profile.
